Commentary:

Cf. Classical Greek μύρμηξ /mýrmēx/ "ant" underwent these sound changes in the Koine and post-Koine period: υ > ι {= /y/ > /i/} and η > ι {= /ē > /i/}, changes which explain Simon's rendering mirmix.
