Translation:

Pepiros is Greek for Latin maturus {"ripe, mature"} and digestus {"digested"}.


Commentary:

Greek πέπειρος /pépeiros/ is "ripe (of fruit); mild (of person); (a disease) coming to crisis point".

By Simon's time the classic diphthong ει {/ei/} had undergone a sound change ει > ι {/ei/ > /i/}, which is reflected in Simon's transcription /pépeiros/ > /pépiros/.
